Recently I was invited to meet George Sandeman, global ambassador and a seventh generation member of the House of Sandeman, at Death & Co. to try out some port cocktails. I’ve had both ruby and tawny port on several occasions but was a virgin to port cocktails. Honestly it never struck me as an ingredient, just something to sip on with after dinner. But my mind has been changed thanks to Joaquin’s skillful bar creations. I was immediately in love with the Dahlgren ( 1 oz Sandeman 20yr Tawny Port, 2 oz Tequila Tezon, 1 oz ginger beer, 3/4 oz simple syrup, 1/2 oz fresh lime juice, dash of bitters. Combine all ingredients over ice in a highball glass. Stir and garnish with a lime slice) while the Baltasar and Blimunda (1/2 oz Sandeman 20yr Tawny Port, 2 oz Beefeater, 1/2 oz bitters [Joaquin used Campari] and 1/2 oz sweet vermouth. Combine all ingredients over ice in a mixing glass and stir. Strain and serve up in a cocktail glass, garnish with flamed orange twist) took me a couple sips. The initial Campari flavor overwhelmed me a bit, but after a couple sips I was diggin’ it. As a fellow writer Amy Zavatto noted, if you’re a Negroni fan you’ll love the Baltasar. Besides promoting their tawny port in cocktails, Sandeman is also visiting the State on behalf of their new 10yr and 30yr tawny ports hitting the market. George also let us in on his favorite play on port, which he calls the Sandeman Royal. Pour about 2 oz of Sandeman 20yr Tawny Port and add a splash of Chivas Regal 12 yr, shake vigorously over ice and strain into a chilled cocktail glass. Garnish with an orange twist and you’re done!
